The variety is called Primitivo because it is ahead in all respects, it flowers, colors the grapes and ripens very early. The name of the variety is derived from the Latin “primativus” or the Italian “primaticcio”, in both cases meaning “early ripening”.
The grapes are grown in vineyards in the Apulia region of Italy and are harvested entirely by hand at the end of August. The grapes are then carefully sorted and only the best quality ones are further processed.

Primitivo Appassimento has an intense ruby color.
AROMA AND TASTE OF WINE
The aroma combines delicate notes of ripening cherries, raspberries and currants. Aging in oak barrels adds a pleasant spicy character. The taste is full, smooth and long-lasting.
INTERESTING
The term Appassimento expresses a special drying method that takes place directly on the vine plant. As soon as the grapes reach the ideal ripeness (mid-August) the stem is twisted so that no further nutrition reaches the grapes. Thanks to this, 25-30% of the juice in the grapes is lost in a period of about 12 days. This is how sugar, tannins and other aromatic substances are concentrated in the grapes, which subsequently give rise to a perfect concentrated aroma.
RECOMMENDATION OF WINE FOR DISHES
It goes well with grilled meat and hard cheeses.
